Today’s baking recipe is the perfect St.Patricks Day treat. Typically not many Irish people know about Whoopie Pies, I definitely think they are more of an American Dessert but basically they are two pieces of fluffy and moist chocolate cake with yummy frosting in the middle. They are the type of dessert that eating just one is simply not enough, if you’re anything like me you will probably eat 3 in a sitting! I made some a few weeks ago to bring to a movie night with the girls and they went down a treat! Some green food coloring for the frosting makes them perfectly Irish for the weekend that’s in it!

 

 

Cake:
1/2 cup butter
1 cup sugar
2 cups flour
5 tablespoons of cocoa
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
2 egg yolks
1 cup milk
1/2 teaspoon of vanilla extract
Frosting:
2 egg whites
2 cups of icing sugar
1 teaspoon of vanilla or peppermint extract
1/2 teaspoon of salt
1/2 cup butter
2 tablespoons of marshmallow fluff
Green Food Coloring
Directions
1. Sive the sugar, flour, cocoa, baking soda, baking powder and salt into a bowl
2. Add the butter, egg yolks, milk and vanilla extract
3. Beat until mixture becomes smooth and shiny
4. Drop using a teaspoon onto an non-greased sheet pan
5. Bake at 375 degrees for 10-12 minutes
6.Remove and let cool
7.Beat all of the frosting ingredients using mixer
8. Using a knife or piping bag, place frosting on one piece of cake and sandwich with another.
